Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon salt

2 teaspoons baking powder

½ teaspoon baking soda

1 large egg

½ cup unsalted butter, melted and slightly cooled

¾ cup whole milk

1 teaspoon pure vanilla extract

1 ½ cups fresh blueberries (or frozen, if necessary)

Zest of 1 lemon (optional, for extra flavor)

1 tablespoon sugar (for sprinkling on top)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or lightly grease it.

    Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, salt, baking powder, and baking soda until well combined.

      Mix Wet Ingredients: In another bowl, beat the egg, then stir in the melted butter, milk, vanilla extract, and lemon zest (if using). Mix until combined.

        Combine & Fold: Pour the wet ingredients into the dry ingredients. Gently fold with a spatula just until incorporated. Be careful not to over-mix; a few lumps are okay!

          Add Blueberries: Gently fold in the blueberries, ensuring not to break them up too much.

            Fill Muffin Tin: Divide the batter evenly among the muffin cups, filling each about ¾ full. Sprinkle the tops with a little sugar for a sweet, crunchy finish.

              Bake: Bake in the preheated oven for 18-22 minutes, or until the muffins are golden brown and a toothpick comes out clean when inserted into the center.

                Cool: Remove from the oven and allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
