Ingredients

8 oz bow tie pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, finely chopped

1/2 cup bell pepper (any color), diced

1/2 cup black olives, sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/3 cup olive oil

2 tbsp red wine vinegar

1 tsp Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the bow tie pasta according to package instructions until al dente. Drain and rinse under cold water to cool down.

    Prepare the Vegetables: While the pasta is cooking, prepare the vegetables. In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, black olives, and parsley.

      Make the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined.

        Combine Ingredients: Add the cooled pasta to the bowl of vegetables, then pour the dressing over the top. Gently toss everything together until well mixed.
