Ingredients

8 small corn or flour tortillas

4 large eggs

1/2 cup shredded cheddar cheese

1/2 cup diced cooked potatoes (seasoned)

1/4 cup black beans (drained and rinsed)

1/2 avocado, sliced

1/4 cup pico de gallo (or diced tomatoes with onion and cilantro)

1/4 cup sour cream (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions

Prepare the Filling:

    In a large skillet, heat the olive oil over medium heat. Add the diced cooked potatoes and sauté for about 3-4 minutes until they become crispy. Season with salt and pepper.

      Scramble the Eggs:

        In a bowl, whisk together the eggs and season with salt and pepper. Pour the eggs into the skillet with the potatoes and gently stir with a spatula until just set, about 3 minutes. Add the black beans and half of the cheese, and mix until combined.

          Warm the Tortillas:

            In another skillet, warm the tortillas over medium heat for about 30 seconds on each side until pliable and slightly charred.

              Assemble the Tacos:

                Fill each tortilla with a generous scoop of the egg and potato mixture. Top with the remaining cheese, sliced avocado, pico de gallo, and a dollop of sour cream if desired.

                  Garnish & Serve:

                    Sprinkle fresh cilantro on top and serve with lime wedges on the side.
