Ingredients

6 large eggs

1 medium-sized potato, peeled and diced

1 cup broccoli florets, chopped

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup shredded cheddar cheese (optional)

1/4 cup milk

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley or chives for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Sauté for about 8-10 minutes or until the potatoes are tender and slightly golden. Stir occasionally to prevent sticking.

      Add Onions and Garlic: Add the chopped onion and minced garlic to the skillet with the potatoes. Cook for an additional 3-4 minutes until the onion is translucent.

        Incorporate Broccoli: Stir in the broccoli florets and cook for another 3 minutes until they are vibrant in color and just tender. Remove the skillet from heat.

          Prepare Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, and pepper. If using cheese, fold it into the egg mixture.

            Combine Ingredients: Pour the egg mixture over the potato and broccoli mixture in the skillet, ensuring it's evenly distributed.

              Cook Frittata on Stovetop: Cook on the stovetop over medium heat for about 5 minutes, or until the edges begin to set.

                Bake in Oven: Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the center is set and the top is lightly golden.

                  Cool and Serve: Once cooked, remove from the oven and let it cool for a few minutes. Gently slide the frittata onto a serving plate or cut it into wedges in the skillet. Garnish with fresh herbs if desired.
