Ingredients

1 cup creamy peanut butter

1/2 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

2 cups semi-sweet chocolate chips

2 tablespoons vegetable shortening (optional)

Instructions

In a large mixing bowl, combine the creamy peanut butter and softened unsalted butter. Mix until smooth and well combined.

    Add the powdered sugar, vanilla extract, and salt to the peanut butter mixture. Stir until a thick dough forms.

      Using your hands or a cookie scoop, form the dough into 1-inch balls and place them on a parchment-lined baking sheet.

        Once all the balls are formed, freeze them for about 30 minutes, or until firm.

          Meanwhile, melt the semi-sweet chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth. If desired, add the vegetable shortening to the chocolate to make it more fluid.

            Remove the peanut butter balls from the freezer. Dip each ball into the melted chocolate, leaving the top uncovered to resemble a buckeye nut.

              Place the chocolate-covered balls back onto the parchment-lined baking sheet. Repeat with all the balls.

                Once all the balls are dipped, return them to the refrigerator for about 15-20 minutes, or until the chocolate has hardened.
