Ingredients

500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

1 large onion, finely chopped

4 cloves garlic, minced

1-inch ginger, grated

2 teaspoons garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon chili powder (adjust to taste)

1 can (400g) crushed tomatoes

200ml heavy cream

2 tablespoons butter

Salt to taste

Fresh cilantro, chopped (for garnish)

1 tablespoon lemon juice

Cooked basmati rice or naan, to serve

Instructions

Marinate the Chicken: In a large bowl, combine chicken pieces with garam masala, ground cumin, ground coriander, chili powder, and salt. Let it marinate for at least 30 minutes (or up to 4 hours in the refrigerator for deeper flavor).

    Sauté Aromatics: In a large pan, heat vegetable oil over medium heat. Add chopped onions and sauté until they turn golden brown, about 5-7 minutes. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

      Cook Chicken: Increase the heat to medium-high and add the marinated chicken pieces. Sauté until the chicken is browned all over, about 5-6 minutes.

        Add Tomatoes: Pour in the crushed tomatoes and stir to combine. Reduce the heat to low, cover, and simmer for 15-20 minutes, allowing the flavors to meld and the chicken to cook through.

          Finish Sauce: After the chicken is cooked, stir in the heavy cream and butter, mixing well until the sauce is creamy and smooth. Adjust seasoning with additional salt and lemon juice, if needed. Let it simmer for another 5 minutes on low heat.

            Serve: Garnish with fresh cilantro before serving. Pair with cooked basmati rice or warm naan for a delightful meal.
