Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

2 1/4 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1 cup pecans, chopped and lightly toasted

1/2 teaspoon ground cinnamon (optional)

1/2 cup white chocolate chips (optional)

Instructions

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

      Beat in the egg and vanilla extract until fully combined.

        In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon (if using).

          Gradually add the dry ingredients to the wet mixture, mixing gently until just combined.

            Fold in the chopped pecans and white chocolate chips (if using) until evenly distributed.

              Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheets, leaving space between each cookie.

                Bake for 10-12 minutes or until the edges are lightly golden but the centers remain soft.

                  Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
