1/4 cup unsalted cold butter, cubed

1 cup buttermilk (plus extra for brushing)

Preheat the Oven: Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt.

      Cut in Butter: Add the cubed cold butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.

        Add Buttermilk: Pour in the buttermilk and honey (if using). Stir gently until just combined. Do not overmix; a few lumps are perfectly fine.

          Knead the Dough: Turn the dough out onto a lightly floured surface. Gently knead the dough just a few times (about 4-5 times), folding it over itself to create layers. Pat it into a rectangle about 1-inch thick.

            Cut Biscuits: Use a biscuit cutter (about 2-3 inches in diameter) to cut out biscuits. Press straight down without twisting to ensure they rise properly. Gather any scraps and re-pat to cut out more biscuits.

              Prepare for Baking: Place the biscuits on the prepared baking sheet, leaving a little space between each. For a beautiful finish, brush the tops with a little extra buttermilk for a nice golden color when baked.
