Ingredients

6 large eggs

1/4 cup buttermilk

2 tablespoons ranch dressing mix (store-bought or homemade)

1 tablespoon unsalted butter

Salt and black pepper, to taste

2 tablespoons chives, finely chopped

1/4 cup shredded cheddar cheese (optional)

Instructions

In a mixing bowl, crack the eggs and add the buttermilk and ranch dressing mix. Whisk vigorously until the mixture is well combined and slightly frothy.

    In a medium skillet, melt the butter over medium heat until it starts to bubble.

      Pour the egg mixture into the skillet. Using a spatula, gently stir the eggs continuously, scraping the bottom of the skillet to ensure even cooking.

        Once the eggs start to set but are still slightly runny, add salt and pepper to taste.

          Keep stirring until the eggs reach your desired consistency (soft and slightly creamy is recommended).

            Remove from heat and fold in the chopped chives and cheddar cheese, if using.

              Serve immediately, garnishing with extra chives if desired.
