Ingredients

  • 4 pieces boneless skinless chicken breasts
  • 1 cup fresh pineapple chunks
  • ½ cup packed brown sugar
  • ¼ cup low-sodium soy sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon olive oil
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes
  • 2 pieces green onions

Instructions

  • In a bowl, combine brown sugar, soy sauce, apple cider vinegar, garlic, ginger, olive oil, black pepper, and red pepper flakes.
  • Whisk until the sugar is mostly dissolved, then add chicken breasts and coat well.
  • Cover and refrigerate for at least 30 minutes or up to 2 hours.
  • Preheat the oven to 375°F (190°C).
  • Grease a baking dish and arrange marinated chicken, pouring leftover marinade over it.
  • Scatter pineapple chunks around the chicken.
  • Cover with foil and bake for 25 minutes, then uncover and bake for another 15-20 minutes until chicken is cooked through.
  • Broil for 3-5 minutes for caramelization, watching closely to avoid burning.
