Ingredients

2 large carrots, grated

1 large apple (Granny Smith or Fuji), cored and shredded

1/4 cup raisins or dried cranberries

1/4 cup chopped walnuts or pecans

1/4 cup plain Greek yogurt

1 tablespoon honey

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Instructions

In a large mixing bowl, combine the grated carrots and shredded apple.

    Add the raisins (or dried cranberries) and chopped walnuts (or pecans) to the bowl.

      In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, ground cinnamon, salt, and pepper until well combined.

        Pour the dressing over the carrot and apple mixture, stirring gently to coat everything evenly.

          Taste and adjust seasoning if needed, adding more honey for sweetness or lemon juice for tartness.
