Ingredients

1 cup rolled oats

2 cups almond milk (or milk of choice)

1 medium carrot, grated

1/4 cup crushed pineapple, drained

1/4 cup chopped walnuts (optional)

1 tsp vanilla extract

1 tsp ground cinnamon

1/2 tsp ground ginger

1/4 cup brown sugar (or maple syrup for a healthier option)

Pinch of salt

Cream cheese or Greek yogurt (for topping)

Raisins (for garnish, optional)

Instructions

Cook the Oats: In a medium saucepan, combine the rolled oats, almond milk, and a pinch of salt. Bring to a boil over medium heat, then reduce to a simmer.

Add Ingredients: Stir in the grated carrot, crushed pineapple, ground cinnamon, ground ginger, and brown sugar (or maple syrup).

Simmer: Cook for about 5-7 minutes, stirring occasionally, until the oats have absorbed most of the liquid and reached a creamy consistency.

Stir in Walnuts: If using, fold in the chopped walnuts for added crunch and flavor.

Serve: Remove from heat and spoon the oatmeal into bowls. Top each serving with a dollop of cream cheese or Greek yogurt for that classic carrot cake frosting flavor.

Garnish: Sprinkle with additional cinnamon, raisins, or more walnuts if desired.

Enjoy: Dig in and enjoy your nutritious and comforting Carrot Cake Oatmeal!
