Ingredients

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup whole milk

2 cups sharp cheddar cheese, shredded

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt and black pepper to taste

Optional: a splash of hot sauce for heat

Instructions

In a medium saucepan over medium heat, melt the unsalted butter.

    Once melted, whisk in the all-purpose flour to form a roux. Cook for about 1-2 minutes until it turns a light golden color, stirring constantly.

      Gradually whisk in the whole milk, ensuring there are no lumps. Continue to stir until the mixture thickens, which should take about 4-5 minutes.

        Lower the heat and add the shredded sharp cheddar cheese, stirring until melted and smooth.

          Stir in the Dijon mustard, garlic powder, and smoked paprika. Mix well.

            Season with salt and black pepper to taste. If desired, add a splash of hot sauce for extra heat.

              Serve immediately over pasta, vegetables, or nachos, or store in an airtight container in the refrigerator for up to a week.
