Ingredients

For the Cheese & Herb Muffins:

2 cups all-purpose flour

1 tbsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup shredded sharp cheddar cheese

1/2 cup crumbled feta cheese

1/4 cup finely chopped fresh herbs (such as chives, parsley, and thyme)

1 cup buttermilk

2 large eggs

1/4 cup melted unsalted butter

For the Whipped Bovril Butter:

1/2 cup unsalted butter, softened

1 tbsp Bovril (beef extract)

1 tbsp fresh chives, finely chopped

1 tsp lemon juice

Salt to taste

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add Cheeses and Herbs: Fold in the shredded cheddar, crumbled feta, and chopped fresh herbs into the flour mixture. Set aside.

        Combine Wet Ingredients: In another bowl, whisk together the buttermilk, eggs, and melted butter until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Avoid overmixing; some lumps are fine!

            Fill Muffin Cups: Divide the batter evenly among the prepared muffin tins, filling each cup about 3/4 full.

              Bake: Bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cool: Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

                  Prepare Whipped Bovril Butter: In a medium bowl, combine the softened butter, Bovril, chopped chives, lemon juice, and salt. Using a hand mixer or a whisk, whip until the mixture is light and fluffy.
