Ingredients

  • 1 pound potato gnocchi
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 medium zucchini diced
  • 1 cup cherry tomatoes halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes
  • to taste salt and freshly ground black pepper
  • 2 cups marinara sauce
  • 1 cup creamy ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup freshly grated Parmesan cheese
  • for garnish fresh basil leaves

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the gnocchi in salted boiling water until they float, about 2-3 minutes, then drain.
  • Heat olive oil in a skillet over medium heat and sauté onion until translucent, about 5 minutes.
  • Add garlic, red bell pepper, and zucchini; sauté for another 5-7 minutes until tender.
  • Stir in cherry tomatoes, oregano, basil, red pepper flakes, salt, and pepper; cook for 3 minutes.
  • Mix in marinara sauce, then gently fold in gnocchi and ricotta until coated.
  • Transfer to a greased 9x13 inch baking dish and top with mozzarella and Parmesan.
  • Bake for 25-30 minutes until cheese is melted and golden brown.
  • Let cool for a few minutes and garnish with fresh basil before serving.
