Ingredients

For the Cheesy Beef Burritos:

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 cup black beans, drained and rinsed

1 cup corn (fresh or canned)

1 cup shredded cheddar cheese

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

4 large flour tortillas

½ cup salsa

¼ cup sour cream (optional)

Fresh cilantro, chopped (for garnish)

For the Crispy Fries:

3 large russet potatoes, cut into thin wedges

3 tablespoons olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Fries:

    - Preheat the oven to 425°F (220°C).

      - In a large bowl, toss the potato wedges with olive oil, paprika, garlic powder, salt, and pepper until well coated.

        - Spread the wedges in a single layer on a baking sheet lined with parchment paper.

          - Bake for 30-35 minutes, flipping halfway, until golden and crispy. Remove from the oven and garnish with fresh parsley.

            Cook the Beef Mixture:

              - In a large skillet over medium heat, add the ground beef and cook until browned. Drain excess fat if necessary.

                - Add the chopped onion and minced garlic, and sauté for about 3-4 minutes until onions are soft.

                  - Stir in the black beans, corn, ground cumin, chili powder, salt, and pepper. Cook for another 5 minutes until heated through.

                    Assemble the Burritos:

                      - In each flour tortilla, layer about a quarter of the beef mixture, sprinkle a generous amount of shredded cheddar cheese, and add a spoonful of salsa.

                        - Fold in the sides of the tortilla and roll it tightly from the bottom up to enclose the filling. Repeat for all tortillas.

                          Melt the Cheese:

                            - Wipe out the skillet used for the beef and return it to medium heat. Place the burritos seam-side down in the skillet.

                              - Cook each side for about 2-3 minutes until the tortillas are golden and crispy and the cheese melts.

                                Serve:

                                  - Cut the burritos in half if desired, and serve with extra salsa, sour cream, and a side of crispy fries. Garnish with fresh cilantro.
