Ingredients

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) enchilada sauce

1 cup beef broth

1 cup frozen cheese tortellini

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (optional, for serving)

Instructions

In a large skillet over medium heat, add the ground beef and cook until browned. Drain any excess fat.

    Add the diced onion and minced garlic to the skillet. Cook for about 3-4 minutes, or until the onion is translucent.

      Stir in the enchilada sauce, beef broth, cumin, chili powder, salt, and pepper. Bring the mixture to a simmer.

        Add the frozen cheese tortellini to the skillet, stirring gently to combine. Cover and cook for about 6-8 minutes, or until the tortellini are tender and heated through.

          Once the tortellini is cooked, sprinkle both the cheddar and Monterey Jack cheese over the top. Cover the skillet again and let it cook for another 2-3 minutes, or until the cheese is melted and bubbly.

            Remove from heat and garnish with fresh chopped cilantro. Serve hot with a dollop of sour cream if desired.
