Ingredients

  • 1 lb ground beef
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 can 15 oz refried beans
  • 1 can 10 oz red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 small flour tortillas
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Fresh cilantro chopped (for garnish)
  • Sour cream for serving

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks.
  • Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  • Stir in the refried beans, chili powder, ground cumin, salt, and pepper until well combined.
  • Take a flour tortilla, fill it with ¼ cup of the beef mixture, and sprinkle with cheese before rolling it up.
  • Place the rolled tortillas seam-side down in a greased 9x13 inch baking dish.
  • Pour the red enchilada sauce over the tortillas and sprinkle with remaining cheese.
  • Cover with aluminum foil and bake for 20 minutes, then remove the foil and bake for an additional 10-15 minutes.
  • Let cool for a few minutes, garnish with cilantro, and serve with sour cream.

Notes

For a spicier kick, add diced jalapeños to the beef mixture.
