Ingredients

  • 2 cups penne pasta
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic finely minced
  • 1 cup cherry tomatoes halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste salt and freshly ground black pepper
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • for garnish fresh basil leaves torn

Instructions

  • In a large pot, bring salted water to a boil and cook the penne pasta until al dente, then drain and reserve a cup of pasta water.
  • Heat olive oil in a large skillet over medium heat, add chicken, season with salt, pepper, oregano, and basil, and sauté until golden brown.
  • Remove chicken from skillet and set aside.
  • In the same skillet, sauté minced garlic for 1 minute, then add halved cherry tomatoes and cook until softened.
  • Lower heat, pour in heavy cream, and stir to combine. Return chicken to skillet and mix well.
  • Gradually add shredded mozzarella and grated Parmesan, stirring until melted and creamy.
  • Add cooked penne pasta, tossing to coat in the sauce, adding reserved pasta water if needed.
  • Cook for an additional 2-3 minutes to heat through.
  • Garnish with torn fresh basil leaves and serve immediately.

Notes

For a lighter version, use half-and-half instead of heavy cream.
