Ingredients

2 cups cooked rice (white or brown)

1 lb boneless, skinless chicken breasts, diced

1 cup hot dogs, sliced

2 cups shredded cheddar cheese

1 can (10.5 oz) cream of chicken soup

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon black pepper

1 cup frozen mixed vegetables (peas, carrots, corn)

1/4 cup green onions, chopped (for garnish)

Salt to taste

1 tablespoon olive oil

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with salt, pepper, garlic powder, onion powder, and paprika. Cook until the chicken is golden brown and fully cooked, about 5-7 minutes. Remove from heat.

      Mix the Sauce: In a separate bowl, combine the cream of chicken soup, milk, and stir until well mixed. Add in the cooked rice, sliced hot dogs, cooked chicken, and frozen vegetables. Mix until everything is evenly combined.

        Add Cheese: Fold in 1½ cups of shredded cheddar cheese into the mixture, reserving the remaining ½ cup for topping.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Top with Cheese: Sprinkle the reserved ½ cup of cheddar cheese over the top of the casserole.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After that, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

                Garnish: Once out of the oven, let it cool for a few minutes. Garnish with chopped green onions before serving.
