Ingredients

  • 4 large russet potatoes thinly sliced
  • 1 cup sharp cheddar cheese grated
  • 1 cup mozzarella cheese grated
  • 1 cup cooked bacon crumbled
  • 1 small onion finely chopped
  • 3 cloves garlic minced
  • 2 cups heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh thyme leaves
  • ½ cup green onions chopped (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet, sauté the chopped onion in oil for 5 minutes until translucent, then add minced garlic and cook for another 1-2 minutes.
  • In a mixing bowl, combine heavy cream, salt, black pepper, smoked paprika, and thyme, whisking until smooth.
  • In a greased baking dish, layer half of the sliced potatoes, then pour half of the cream mixture over them.
  • Sprinkle half of the cheddar, half of the mozzarella, and half of the bacon on top.
  • Repeat the layering with the remaining potatoes, cream mixture, cheeses, and bacon.
  • Cover with foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 20-25 minutes until the top is golden and bubbling.
  • Let the dish rest for 10 minutes before serving, garnished with chopped green onions.
