Ingredients

1 can (15 oz) of kidney beans, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ginger, grated

1 teaspoon cumin seeds

1 teaspoon ground coriander

½ teaspoon red chili powder (adjust to taste)

½ teaspoon garam masala

Salt, to taste

½ cup diced tomatoes (fresh or canned)

½ cup shredded cheddar cheese (or your choice of cheese)

4 slices of whole grain bread

Fresh cilantro, chopped (for garnish)

Instructions

Sauté Base: In a large skillet, heat the olive oil over medium heat. Add the cumin seeds and allow them to sizzle for about 30 seconds until fragrant. Next, add the chopped onions and sauté until they become translucent, about 3-4 minutes. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes.

    Add Spices: Sprinkle in the ground coriander, red chili powder, garam masala, and salt. Stir well to combine and cook for another minute, letting the spices bloom.

      Cook Beans: Add the drained kidney beans and diced tomatoes to the skillet. Mix everything together and allow the mixture to cook on medium heat for about 5-7 minutes, stirring occasionally until everything is heated through and well combined. If the mixture is too thick, add a splash of water to loosen it.

        Cheesy Twist: Reduce the heat to low, sprinkle the shredded cheese over the bean mixture, and gently stir until the cheese melts and is well incorporated. Cook for an additional 2 minutes.

          Toast Bread: While the bean mixture is finishing, toast the slices of whole grain bread until golden brown.

            Assemble: Spoon the cheesy masala beans generously over the toasted bread slices.

              Garnish: Sprinkle freshly chopped cilantro on top for added flavor and presentation.
