Cheesy Ranch Scalloped Potatoes

Ingredients

3 lbs russet potatoes, thinly sliced

1 cup sharp cheddar cheese, grated

1 cup mozzarella cheese, grated

1 cup ranch dressing

1 cup heavy cream

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

¼ cup green onions, chopped (for garnish)

½ cup breadcrumbs (optional, for topping)

Instructions

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the ranch dressing, heavy cream, milk, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.

      Grease a 9x13 inch baking dish with butter or non-stick spray.

        Layer half of the sliced potatoes in the bottom of the dish. Pour half of the ranch cream mixture over the potatoes, then sprinkle half of the cheddar and mozzarella cheese on top.

          Repeat the layers with the remaining potatoes, ranch cream mixture, and cheeses, finishing with a layer of cheese on top.

            If you like a crispy topping, sprinkle breadcrumbs evenly over the top layer of cheese.

              Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 30-40 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.

                Let the dish cool for about 10 minutes before serving. Garnish with chopped green onions before serving.
