Ingredients

1 whole head of garlic

1 tablespoon olive oil

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Fresh parsley or chives, chopped (for garnish)

Tortilla chips or sliced baguette (for serving)

Instructions

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top off the whole head of garlic to expose the cloves. Drizzle with olive oil, wrap in aluminum foil, and place in the oven. Roast for about 30-35 minutes, until the garlic is soft and caramelized.

        Prepare the Dip Base:

          - In a mixing bowl, add the softened cream cheese and sour cream. Use a hand mixer or a whisk to combine them until smooth.

            Add Cheeses and Seasonings:

              - Once the garlic is roasted, let it cool a bit, then squeeze the garlic cloves out of their skins directly into the cream cheese mixture.

                - Add the shredded sharp cheddar cheese and mozzarella cheese. Then stir in the garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until all the ingredients are well combined.

                  Bake the Dip:

                    - Preheat your oven to 375°F (190°C).

                      - Transfer the mixture into an oven-safe baking dish and spread it out evenly. Top with extra shredded cheese if desired.

                        - Bake for 20-25 minutes, until the dip is bubbling and golden on top.

                          Serve:
