Ingredients

  • 2 cups assorted vegetables bell peppers, zucchini, cherry tomatoes
  • 1 cup fresh broccoli florets
  • 1 medium red onion thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste freshly ground black pepper
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled feta cheese
  • for garnish fresh basil leaves

Instructions

  • Preheat your oven to 425°F (220°C).
  • In a large mixing bowl, combine the assorted vegetables, broccoli florets, and red onion.
  • Drizzle olive oil over the vegetables and sprinkle with garlic powder, oregano, salt, and pepper. Toss to coat.
  • Spread the vegetable mixture on a large baking sheet in a single layer.
  • Roast in the oven for 20 to 25 minutes, stirring halfway through.
  • Remove from the oven and sprinkle mozzarella and feta cheese over the vegetables.
  • Return to the oven and bake for an additional 5 to 7 minutes until the cheese is melted.
  • Allow to cool slightly before garnishing with fresh basil leaves.

Notes
