Ingredients

1 lb (450g) smoked sausage, sliced

1 cup uncooked long-grain white rice

2 cups chicken broth

1 medium onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

1 cup shredded sharp cheddar cheese

1 cup frozen peas and carrots mixture

1 tablespoon olive oil

1 teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt (or to taste)

Fresh parsley, chopped (for garnish)

Instructions

Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sliced smoked sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

    Cook Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté until the onion becomes translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      Add Rice: Stir in the uncooked rice and cook for 2 minutes, stirring frequently to allow it to toast slightly.

        Combine Ingredients: Pour in the chicken broth, add paprika, black pepper, and salt. Stir well to combine. Bring the mixture to a boil.

          Simmer: Reduce heat to low, cover, and let simmer for 15-20 minutes or until the rice is tender and has absorbed most of the liquid.

            Add Sausage and Veggies: Return the browned sausage to the skillet, and stir in the frozen peas and carrots. Cover and cook for an additional 5 minutes until the veggies are heated through.

              Cheese It Up: Remove from heat and stir in the shredded cheddar cheese until melted and creamy.

                Serve: Garnish with chopped fresh parsley before serving. Enjoy your cheesy sausage and rice delight!
