1 medium butternut squash, peeled and cubed (about 4 cups)

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ teaspoon smoked paprika

Salt and black pepper, to taste

½ cup shredded sharp cheddar cheese

¼ cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Preparation: Start by peeling the butternut squash and cutting it into evenly sized cubes, about 1-inch pieces. This will ensure they cook evenly.

    Sautéing Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 4-5 minutes until it's translucent and fragrant. Add the minced garlic and sauté for an additional 1-2 minutes, being careful not to let it burn.

      Cooking the Squash: Add the cubed butternut squash to the skillet and stir well to coat it with the oil. Sprinkle the thyme, smoked paprika, salt, and black pepper over the squash. Sauté for about 10-15 minutes, stirring occasionally, until the squash is tender and slightly caramelized.

        Adding Cheese: Once the squash is cooked through, reduce the heat to low. Sprinkle the shredded cheddar and grated Parmesan cheese evenly over the squash. Cover the skillet with a lid and let it cook for an additional 2-3 minutes until the cheese is melted and bubbly.
