  • 2 lbs russet potatoes thinly sliced
  • 2 cups sharp cheddar cheese grated
  • 1 cup Gruyère cheese grated
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 cups heavy cream
  • 1 cup whole milk
  • 4 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • Fresh parsley chopped (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.
  • Melt the unsalted butter in a medium saucepan over medium heat, then sauté the chopped onion for about 5 minutes until translucent.
  • Add the minced garlic and sauté for an additional minute.
  • Sprinkle in the all-purpose flour, stirring constantly for 1-2 minutes to create a roux.
  • Gradually whisk in the heavy cream and whole milk, stirring until the mixture thickens, about 3-5 minutes.
  • Season the mixture with salt, black pepper, fresh thyme, and paprika, then remove from heat.
  • Layer half of the sliced potatoes in the baking dish, pour half of the cream mixture over them, and sprinkle half of the cheeses on top.
  • Repeat with the remaining potatoes, cream mixture, and cheeses, ensuring the top layer is generously covered with cheese.
  • Cover with aluminum foil and bake for 45 minutes, then remove the foil and bake for an additional 20-25 minutes until golden brown.
  • Allow to cool for 10 minutes before serving, garnished with chopped parsley.
