Ingredients

  • 9 pieces lasagna noodles
  • 2 cups ricotta cheese
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups fresh spinach roughly chopped
  • 1 cup mushrooms thinly sliced
  • 1 jar marinara sauce
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning blend
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  • Preheat your oven to 375°F (190°C).
  • Cook the lasagna noodles according to package instructions until al dente; drain and set aside.
  • In a skillet, heat olive oil over medium heat, add garlic and mushrooms, and sauté for 5 minutes.
  • Stir in chopped spinach and cook until wilted, then remove from heat.
  • In a mixing bowl, combine ricotta, egg, Parmesan, Italian seasoning, salt, and pepper; mix until smooth.
  • Spread a layer of marinara sauce in a 9x13 inch baking dish.
  • Layer 3 noodles, half of the ricotta mixture, half of the spinach and mushrooms, and a third of the mozzarella; repeat.
  • Finish with noodles topped with marinara and remaining mozzarella.
  • Cover with foil and bake for 25 minutes, then uncover and bake for another 15 minutes until golden brown.
  • Cool for 10 minutes before slicing and serving.

Notes

Let the lasagna cool for a few minutes before slicing for cleaner pieces.
