Ingredients

1 lb ground beef

1 packet taco seasoning

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/4 cup diced bell peppers (any color)

1/4 cup diced onions

1 package egg roll wrappers

1 egg (beaten for sealing)

1/2 cup salsa (for dipping)

Cooking oil for frying

Optional garnishes: sour cream, chopped cilantro, jalapeños

Instructions

Cook the Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain excess grease.

    Add Seasoning: Stir in the taco seasoning and prepare according to the package instructions (usually adding water and simmering for a few minutes).

      Incorporate Veggies: Mix in the diced bell peppers and onions, cooking for an additional 3-4 minutes until the vegetables are soft. Remove from heat.

        Cheese it Up: Stir in the shredded cheddar and mozzarella cheese until well combined and melted.

          Prepare Egg Roll Wrappers: On a clean surface, lay out an egg roll wrapper with a corner pointing towards you. Add about 2 tablespoons of the cheesy taco mixture in the center.

            Seal the Sticks: Brush the edges of the wrapper with beaten egg, fold up the bottom corner over the filling, then fold in the sides and roll tightly. Repeat with remaining mixture.

              Fry the Sticks: In a deep frying pan, heat about 2 inches of cooking oil over medium heat. Fry the taco sticks in batches, about 2-3 minutes on each side, until golden brown and crispy. Drain on paper towels.
