Ingredients

2 slices of sourdough bread

1 cup cooked chicken, shredded (can use rotisserie for convenience)

1 ripe avocado, mashed

1/2 cup shredded mozzarella cheese

1/4 cup cherry tomatoes, halved

2 tablespoons mayonnaise

1 tablespoon lime juice

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro leaves (for garnish)

Butter (for grilling)

Instructions

Prepare the Avocado Spread: In a small bowl, mash the ripe avocado with lime juice, garlic powder, salt, and pepper until smooth. Set aside.

    Make the Chicken Filling: In another bowl, combine the shredded chicken, mayonnaise, cherry tomatoes, and a pinch of salt and pepper. Mix well to combine.

      Assemble the Sandwich: On one slice of sourdough bread, spread a generous layer of the avocado mixture. Top with the chicken filling, then sprinkle the shredded mozzarella cheese on top. Finish with the second slice of sourdough bread on top.

        Grill the Sandwich: In a skillet over medium heat, melt a tablespoon of butter. Once melted, add the prepared sandwich. Cook for about 3-4 minutes on one side, or until golden brown and crispy. Carefully flip the sandwich and add more butter to the pan if necessary, then grill the other side for another 3-4 minutes until crispy and the cheese is melted.
