Ingredients

2 boneless, skinless chicken breasts, thinly sliced

4 cups chow mein noodles

1 cup sliced bell peppers (mixed colors)

1 cup shredded carrots

1 cup bean sprouts

1 cup snow peas

4 green onions, sliced

3 cloves garlic, minced

2 tablespoons vegetable oil

Salt and pepper to taste

Chow Mein Sauce:

1/4 cup soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 1 tablespoon cold water (for thickening)

1 teaspoon sugar

Instructions

Prepare the Sauce: In a bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and cornstarch mixture. Set aside.

Cook Noodles: In a large pot, bring salted water to a boil. Add chow mein noodles and cook according to package instructions until al dente. Drain and rinse under cold water, then set aside.

Sauté Chicken: In a large wok or frying pan, heat vegetable oil over medium-high heat. Add the sliced chicken, season with salt and pepper, and stir-fry until the chicken is cooked through and browned. Remove from the pan and set aside.

Stir-Fry Vegetables: In the same pan, add garlic and stir for about 15 seconds until fragrant. Add bell peppers, carrots, snow peas, and cook for 2-3 minutes until slightly tender but still crisp.

Combine Ingredients: Return the cooked chicken to the pan along with the chow mein noodles. Pour the prepared chow mein sauce over everything. Toss well to combine and cook for an additional 2-3 minutes until everything is heated through and the sauce thickens slightly.

Add Bean Sprouts & Green Onions: Gently fold in the bean sprouts and sliced green onions just before serving to keep their crunch.

Serve: Plate the chow mein hot, garnished with extra green onions or sesame seeds if desired.
