Ingredients

8 oz egg noodles (or lo mein noodles)

2 tablespoons vegetable oil

1 pound boneless, skinless chicken breast, thinly sliced

1 cup bell peppers, sliced (mix of colors)

1 cup snow peas

1 cup carrots, julienned

4 green onions, chopped

3 cloves garlic, minced

1 tablespoon ginger, minced

3 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

Salt and pepper to taste

Sesame seeds (for garnish)

Instructions

Cook the Noodles: Bring a large pot of water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

    Prepare Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken, season with salt and pepper, and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the garlic and ginger for about 30 seconds until fragrant. Then, add the bell peppers, snow peas, and carrots. Stir-fry the vegetables for 3-4 minutes until they are vibrant and slightly tender.

        Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add the cooked noodles, soy sauce, oyster sauce, hoisin sauce, and sesame oil. Toss everything together over medium heat until heated through and the noodles are coated in the sauce, about 2-3 minutes.
