Ingredients

2 cups cooked chicken, shredded

1 cup spinach, chopped

1/2 cup cream cheese, softened

1/2 cup grated mozzarella cheese

1/4 cup sun-dried tomatoes, chopped

1/4 cup green onions, sliced

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

4 large flour tortillas

1/4 cup olive oil (for brushing)

1 tsp dried oregano

Instructions

In a large mixing bowl, combine the shredded chicken, spinach, cream cheese, mozzarella cheese, sun-dried tomatoes, green onions, garlic powder, smoked paprika, salt, and pepper. Mix until well combined.

    Lay out a flour tortilla on a clean surface. Spoon about 1/2 cup of the chicken mixture onto the center of the tortilla, spreading it out evenly.

      Roll the tortilla tightly from the bottom up, folding in the sides as you go to enclose the filling. Repeat with the remaining tortillas and filling.

        Preheat a skillet over medium heat. Brush each rolled tortilla with olive oil on both sides.

          Place the rolled tortillas seam-side down in the skillet. Cook for about 3-4 minutes on each side or until golden brown and crispy.

            Remove the rolls from the skillet and let them cool slightly before slicing into pinwheels or serving whole. Sprinkle with dried oregano for added flavor.

              Serve warm with your favorite dipping sauce, like ranch or salsa!
