Ingredients

2 large chicken breasts

1/2 cup green olives, pitted and roughly chopped

1/4 cup feta cheese, crumbled

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

1/4 cup breadcrumbs (optional for crunch)

2 tablespoons olive oil

Fresh parsley for garnish

Lemon wedges for serving

Instructions

Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper.

    Carefully butterfly the chicken breasts by slicing them in half horizontally, but not all the way through. Open them like a book and gently pound them to an even thickness using a mallet or rolling pin.

      In a mixing bowl, combine the chopped green olives, feta cheese, minced garlic, dried oregano, paprika, salt, and pepper. Mix well until all ingredients are evenly incorporated.

        Spread the olive mixture evenly over each chicken breast, leaving some space at the edges.

          Roll up each chicken breast tightly from one end to the other. Secure the rolls with kitchen twine or toothpicks to hold them together.

            If using breadcrumbs, sprinkle them evenly on top of each chicken roll for added crunch.

              Heat olive oil in a skillet over medium-high heat. Once hot, sear each chicken roll for about 3-4 minutes on each side until golden brown.

                Transfer the seared chicken rolls to the prepared baking dish. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and juices run clear.

                  Remove from the oven and let it rest for a few minutes before slicing. Garnish with fresh parsley and serve with lemon wedges on the side.
