Ingredients

1 lb ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup finely chopped fresh parsley

2 tbsp minced garlic

1 tbsp fresh thyme leaves

1 tbsp fresh rosemary, chopped

1 tsp smoked paprika

1/2 tsp salt

1/4 tsp black pepper

1/4 cup grated Parmesan cheese

1 small onion, grated

1 egg, lightly beaten

Wooden skewers (soaked in water for 30 minutes)

Instructions

Prepare the Mixture: In a large bowl, combine the ground chicken, breadcrumbs, chopped parsley, minced garlic, thyme, rosemary, smoked paprika, salt, black pepper, Parmesan cheese, grated onion, and the beaten egg.

Mix Thoroughly: Use your hands or a spatula to mix everything together until all ingredients are evenly incorporated. The mixture should be moist but firm.

Form the Sausages: With wet hands, take small amounts of the mixture and shape them into sausage links around the soaked wooden skewers. Press firmly to ensure they hold their shape.

Preheat the Grill: Preheat your grill to medium-high heat.

Grill the Skewers: Place the skewers on the grill, being careful to space them out. Grill for about 8-10 minutes, turning occasionally, until the sausages are cooked through and have nice grill marks.

Serve and Enjoy: Once done, remove from the grill and let cool slightly before serving. These can be enjoyed on their own, served with dipping sauces, or as part of a salad or grain bowl.
