Ingredients

For the Chicken Marinade:

1 lb boneless chicken thighs

3 garlic cloves, minced

1 tablespoon ground cumin

1 tablespoon ground coriander

1 teaspoon smoked paprika

1 teaspoon ground turmeric

1/2 teaspoon cayenne pepper (adjust to taste)

1/4 cup plain yogurt

2 tablespoons olive oil

Salt and pepper to taste

Juice of 1 lemon

For the Fatteh:

2 cups day-old pita bread, torn into pieces

1 cup plain yogurt

1/4 cup tahini

1 tablespoon lemon juice

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1/4 cup pine nuts, toasted

1/4 cup parsley, finely chopped

1/4 teaspoon sumac (optional, for garnish)

For Garnish:

Additional parsley

Sliced radishes

Sliced cucumbers

Instructions

Marinate the Chicken: In a large bowl, combine minced garlic, ground cumin, ground coriander, smoked paprika, turmeric, cayenne, yogurt, olive oil, lemon juice, salt, and pepper. Add the chicken thighs, making sure they're well-coated in the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.

    Prepare the Pita Bread: Preheat your oven to 375°F (190°C). Spread the torn pita bread pieces on a baking sheet and toast them in the oven for about 10 minutes, or until they are golden and crisp. Remove from the oven and set aside.

      Cook the Chicken: In a skillet over medium heat, add a little olive oil. Remove the marinated chicken from the fridge and cook in the skillet for about 5-7 minutes per side, or until fully cooked and nicely charred. Once cooked, remove from heat and allow to rest for a few minutes before slicing into strips.

        Make the Sauce: In a small bowl, mix the yogurt, tahini, lemon juice, garlic powder, salt, and black pepper until smooth and well combined.

          Assemble the Fatteh: In a serving dish, layer the toasted pita bread pieces at the bottom. Drizzle half of the yogurt-tahini sauce over the pita. Arrange the sliced chicken on top of the bread, followed by the remaining sauce.

            Garnish: Sprinkle toasted pine nuts and chopped parsley over the dish. For an extra layer of flavor, you can also sprinkle sumac on top. Serve with radish slices and cucumbers on the side.
