Chicken Shawarma Wrap with Garlic Sauce

Ingredients

500g boneless, skinless chicken thighs

3 tablespoons olive oil

Juice from 1 lemon

3 cloves garlic, finely minced

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon paprika

1 teaspoon turmeric

1 teaspoon ground cinnamon

Salt and freshly cracked black pepper to taste

4 large pita breads or wraps

1 medium cucumber, thinly sliced

1 medium tomato, diced

1 small red onion, thinly sliced

Fresh parsley or cilantro, chopped, for garnish

For the Garlic Sauce:

1 cup Greek yogurt

2 tablespoons mayonnaise

4 cloves garlic, finely minced

1 tablespoon lemon juice

Salt and freshly cracked black pepper to taste

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper until well combined. Add the chicken thighs to the bowl and toss until they are thoroughly coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to overnight for deeper flavor.

    Prepare the Garlic Sauce: In a separate bowl, combine the Greek yogurt, mayonnaise, minced garlic, lemon juice, salt, and black pepper. Stir until the mixture is smooth and creamy. Taste and adjust the seasoning as needed. Cover and refrigerate to allow the flavors to blend.

      Cook the Chicken: Preheat your grill or skillet to medium-high heat. Remove the marinated chicken from the refrigerator and discard any excess marinade. Grill or cook the chicken thighs for about 5-7 minutes on each side, or until they are browned and the internal temperature reaches 75°C (165°F). Once cooked, transfer the chicken to a cutting board and let it rest for a few minutes before slicing it into thin strips.

        Assemble the Wraps: Take your pita bread or wraps and lay them flat. On each wrap, place a generous portion of sliced chicken, followed by layers of sliced cucumber, diced tomatoes, and thinly sliced red onion. Drizzle a healthy amount of garlic sauce over the top.
