Chicken Tajine with couscous

Ingredients

4 bone-in chicken thighs, skinless

2 tablespoons olive oil

1 large onion, thinly sliced

3 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon ground cinnamon

1 teaspoon paprika

½ teaspoon cayenne pepper (optional for heat)

1½ cups chicken broth

1 can (14 oz) chickpeas, drained and rinsed

1 cup dried apricots, halved

1 cup pitted green olives, halved

1 lemon, zested and juiced

Fresh cilantro or parsley, for garnish

Salt and pepper to taste

1 ½ cups couscous

2 cups water or chicken broth (for couscous)

Instructions

Brown the Chicken: In a large tajine pot or a heavy-bottomed Dutch oven, heat olive oil over medium-high heat. Season the chicken thighs with salt and pepper. Add them to the pot and brown on both sides, about 5 minutes per side. Remove and set aside.

    Sauté Aromatics: In the same pot, add the sliced onions and sauté until they are soft and translucent, about 7 minutes. Stir in minced garlic and cook for another minute until fragrant.

      Spice it Up: Add the ground cumin, coriander, cinnamon, paprika, and cayenne pepper. Stir the spices into the onions and cook for 2 more minutes, allowing the flavors to meld.

        Add Chicken & Liquids: Return the browned chicken to the pot. Pour in the chicken broth and bring to a gentle simmer. Add the chickpeas, dried apricots, olives, lemon zest, and juice.

          Simmer the Tajine: Cover the pot with a lid, reduce the heat to low, and let it simmer for about 45–60 minutes, or until the chicken is tender and fully cooked. Stir occasionally and adjust seasoning with salt and pepper to taste.

            Prepare Couscous: While the tajine simmers, prepare the couscous. In a saucepan, bring 2 cups of water or chicken broth to a boil. Once boiling, remove from heat, stir in the couscous, and cover. Let it sit for 5 minutes, then fluff with a fork.

              Serve: Serve the chicken tajine on a bed of fluffy couscous, garnished with fresh cilantro or parsley for a pop of color and flavor.
