Ingredients

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 can (6 oz) tomato paste

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups elbow macaroni

3 cups beef or vegetable broth

1 1/2 cups shredded cheddar cheese (divided)

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Instructions

In a large pot over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a wooden spoon. Drain excess fat.

    Add the diced onion and minced garlic to the pot. Sauté until the onion is translucent, about 3-4 minutes.

      Stir in the kidney beans, black beans, diced tomatoes (with juices), and tomato paste. Mix well to combine.

        Add the chili powder, cumin, smoked paprika, salt, and black pepper. Stir and let it simmer for about 5 minutes to let the flavors meld.

          While the chili mixture simmers, bring the 3 cups of broth to a boil in a separate pot. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

            Once the chili has simmered, stir in the cooked macaroni and 1 cup of shredded cheddar cheese. Mix until the cheese is melted and everything is well coated.

              Taste and adjust seasoning if necessary. Serve hot, garnished with remaining cheddar cheese, fresh cilantro, and a dollop of sour cream, if desired.
