Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

2 large onions, thinly sliced

3 cloves garlic, minced

1 inch fresh ginger, grated

1 bell pepper (red or green), sliced

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil (divided)

1 tablespoon sesame oil

1 teaspoon sugar

1 teaspoon black pepper

2 green onions, chopped for garnish

Cooked rice or noodles, for serving

Instructions

Prepare the Beef: In a medium bowl, combine the sliced flank steak, soy sauce, oyster sauce, cornstarch, sugar, and black pepper. Mix well to coat the meat evenly and let it marinate for at least 20 minutes.

    Heat the Oil: Heat 2 tablespoons of vegetable oil in a large wok or skillet over high heat until shimmering.

      Cook the Beef: Add the marinated beef to the hot wok in a single layer. Let it sear for about 1-2 minutes without stirring to achieve a nice browning. Stir-fry for another 2 minutes until it's cooked through. Remove the beef from the wok and set it aside.

        Stir-Fry the Vegetables: In the same wok, add the remaining tablespoon of oil. Add the sliced onions and bell pepper. Stir-fry for about 3-4 minutes, or until the onions become translucent and slightly caramelized.

          Add Aromatics: Add the minced garlic and grated ginger to the veggies and stir-fry for another 30 seconds until fragrant.

            Combine the Ingredients: Return the cooked beef to the wok with the vegetables. Drizzle with sesame oil and toss everything together, cooking for another minute to combine the flavors.

              Serve: Garnish with chopped green onions and serve hot over cooked rice or noodles.
