Instructions

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, beat the softened butter with granulated and brown sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition, then add vanilla and peppermint extracts.
  • In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Fold in chocolate chips and crushed peppermint candies until evenly distributed.
  • Drop rounded balls of dough onto the prepared baking sheet, spacing them 2 inches apart.
  • Bake for 10-12 minutes until edges are set and centers are soft.
  • Let cookies rest on the baking sheet for 5 minutes before transferring to a wire rack to cool.
