  • 4 pieces bone-in skin-on chicken thighs
  • ¼ cup freshly squeezed lime juice
  • ¼ cup fresh cilantro finely chopped
  • 3 cloves garlic minced
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon sweet paprika
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 piece lime zest

Instructions

  • In a large mixing bowl, combine lime juice, chopped cilantro, minced garlic, olive oil, ground cumin, paprika, salt, black pepper, and lime zest.
  • Whisk the ingredients together until well blended to form a marinade.
  • Place chicken thighs into the marinade, ensuring each piece is coated, then refrigerate for at least 30 minutes or up to 2 hours.
  • Preheat grill to medium-high heat (375°F to 400°F) or oven to 425°F (220°C).
  • Remove chicken from marinade, shaking off excess, and discard remaining marinade.
  • For grilling, cook chicken thighs skin-side down for 6-7 minutes, then flip and cook for another 6-7 minutes until internal temperature reaches 165°F (75°C).
  • For baking, arrange chicken skin-side up on a parchment-lined baking sheet and bake for 30-35 minutes until golden brown and crispy.
