Ingredients

4 cups of cubed day-old brioche or challah bread

4 large eggs

1 cup whole milk

1/4 cup heavy cream

1/2 cup granulated sugar

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup brown sugar, packed

2 teaspoons ground cinnamon (for sprinkling)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a standard muffin tin with non-stick cooking spray or line with muffin liners.

    Prepare the Bread: In a large mixing bowl, combine the cubed brioche or challah bread. Set aside.

      Make the Egg Mixture: In a separate bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, nutmeg (if using), and salt until well combined.

        Combine: Pour the egg mixture over the bread cubes, gently folding to ensure all the bread is coated. Allow the mixture to sit for about 10-15 minutes to soak up the liquid.

          Spoon into Muffin Tin: Use a ladle or large spoon to fill each muffin cup with the soaked bread mixture, filling them about 3/4 of the way full.

            Prepare Cinnamon Sugar Topping: In a small bowl, combine the brown sugar and 2 teaspoons of ground cinnamon. Drizzle the melted butter over the muffins and then sprinkle the cinnamon sugar mixture generously on top of each muffin.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                Cool: Remove from the oven and let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

                  Serve: Enjoy warm or at room temperature, optionally drizzled with maple syrup or a dusting of powdered sugar.
