Ingredients

  • 3 whole ripe bananas thoroughly mashed
  • cup unsalted butter melted
  • 1 teaspoon pure vanilla extract
  • 1 large egg beaten
  • 1 teaspoon baking soda
  • a pinch salt
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ cup chopped walnuts or pecans optional
  • ¼ cup packed brown sugar

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a large bowl, combine the mashed bananas and melted butter until blended.
  • Add the beaten egg and vanilla extract, stirring until combined.
  • Sprinkle in the baking soda and salt, then stir to integrate.
  • Gradually mix in the sugar and flour until just combined, avoiding overmixing.
  • In a small bowl, mix the ground cinnamon and brown sugar to create a blend.
  • Pour half of the banana batter into the loaf pan and sprinkle half of the cinnamon sugar mixture on top.
  • Add the remaining banana batter and sprinkle the rest of the cinnamon sugar mixture over it.
  • Use a knife to swirl through the batters for a marbled effect.
  • Bake for 60-65 minutes or until a toothpick comes out clean, then cool for 10 minutes before transferring to a wire rack.

Notes

For best results, use very ripe bananas.
