4 cups fresh peaches, peeled and sliced (can substitute with frozen peaches if necessary)

1 cup granulated sugar, divided (½ cup for peaches, ½ cup for batter)

1 teaspoon cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

1 cup all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon salt

½ cup unsalted butter, melted

1 cup whole milk

1 teaspoon vanilla extract

Prepare the Peaches: In a large mixing bowl, combine the sliced peaches, ½ cup of granulated sugar, cinnamon, lemon juice, and cornstarch. Toss until the peaches are well-coated. Let them sit for about 15 minutes to release their juices.

    Preheat Oven: Preheat your oven to 350°F (175°C).

      Make the Batter: In another mixing bowl, whisk together the flour, remaining ½ cup of granulated sugar, baking powder, and salt. Stir in the melted butter, milk, and vanilla extract until just combined. Do not overmix; a few lumps are fine.

        Assemble the Cobbler: Pour the batter into a greased 9x13-inch baking dish, spreading it out evenly. Spoon the peach mixture over the batter, including all the juices. Do not stir; the batter will rise around the peaches during baking.

          Bake: Place the baking dish in the preheated oven and bake for about 35-45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean. The cobbler should bubble around the edges.

            Cool and Serve: Allow the cobbler to cool slightly before serving. It can be enjoyed warm or at room temperature, preferably with a scoop of vanilla ice cream on top.
