Ingredients

1 cup jasmine rice

1 1/2 cups coconut milk

1/2 cup unsweetened shredded coconut

1/4 cup sugar (optional, adjust based on coconut milk sweetness)

1/4 teaspoon salt

1 teaspoon vanilla extract

1/4 teaspoon baking powder

Cooking spray or oil (for greasing)

Instructions

Rinse and Soak the Rice: Rinse the jasmine rice under cold water until the water runs clear. Soak the rice in water for 30 minutes. Drain and set aside.

    Cook the Rice: In a medium saucepan, combine the rinsed rice and coconut milk. Add salt, and sugar (if using), and bring to a mild simmer over medium heat. Cover, reduce heat to low, and cook for 15-20 minutes, until the rice is tender and has absorbed most of the coconut milk.

      Mix Ingredients: Once the rice is cooked, remove from heat and let it sit, covered, for about 10 minutes. Stir in the shredded coconut, vanilla extract, and baking powder until well combined.

        Prepare Baking Dish: Preheat your oven to 350°F (175°C). Grease a square or rectangular baking dish (9x9 inch or similar) with cooking spray or oil.

          Fill the Dish: Pour the coconut rice mixture into the prepared dish and spread it evenly. Press it down gently to create an even layer.

            Bake: Bake in the preheated oven for 25-30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.

              Cool and Slice: Remove from the oven and allow to cool in the pan for about 10 minutes. Once cool, cut into squares or desired shapes.

                Serve: Enjoy warm or at room temperature, optionally drizzling with extra coconut milk or serving with a fruity salsa for added freshness.
