Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 cup wild rice
  • 1 medium onion
  • 2 cloves garlic
  • 3 medium carrots
  • 2 stalks celery
  • 4 cups low-sodium chicken broth
  • 1 cup water
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon freshly ground black pepper
  • 1 cup fresh spinach
  • ½ cup heavy cream
  • Salt
  • Fresh parsley

Instructions

  • Place the boneless chicken breasts at the bottom of the crock pot.
  • Layer the wild rice, onion, garlic, carrots, and celery on top of the chicken.
  • Pour the chicken broth and water over the ingredients.
  • Sprinkle thyme, rosemary, and black pepper over the mixture. Add salt to taste.
  • Secure the lid and cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, remove the chicken, shred it, and return it to the soup.
  • Stir in the chopped spinach and add heavy cream if desired.
  • Cook for an additional 30 minutes on low before serving.

Notes

For a creamier texture, add heavy cream towards the end of cooking.
