Ingredients

  • 4 large Yukon Gold potatoes peeled and diced into 1-inch cubes
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 3 cups vegetable broth or chicken broth
  • 1 cup heavy cream
  • 1 cup carrots diced into small pieces
  • 1 cup celery diced into small pieces
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • to taste salt and freshly ground black pepper
  • 4 slices bacon cooked until crispy and crumbled (optional for garnish)

Instructions

  • In a large pot, heat a drizzle of oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent.
  • Stir in the minced garlic and cook for an additional minute.
  • Add the diced carrots and celery to the pot and sauté for about 5 minutes until softened.
  • Incorporate the diced potatoes, dried thyme, smoked paprika, and a pinch of salt and pepper.
  • Pour in the broth and bring to a rolling boil. Reduce heat to low, cover, and simmer for 20-25 minutes until potatoes are fork-tender.
  • Use an immersion blender to puree the soup until smooth, or blend in batches in a countertop blender.
  • Return the soup to the pot and stir in the heavy cream. Gently heat over low until warmed through.
  • Taste and adjust seasoning with additional salt and pepper as desired.
  • Serve hot, garnished with crumbled bacon and freshly chopped chives or parsley.

Notes

For a vegetarian version, omit the bacon and use vegetable broth.
