Ingredients

4 ears of fresh corn, husked and cleaned

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/2 cup cotija cheese, crumbled

1/4 cup fresh cilantro, chopped

1 lime, juiced

Instructions

Preheat the Grill: Prepare your grill by preheating it to medium-high heat.

Prepare the Corn: Husk the corn and remove all silk. Rinse the ears under cold water to ensure they are clean.

Season the Corn: In a small bowl, combine olive oil, smoked paprika, garlic powder, sea salt, and black pepper. Brush this mixture generously over each ear of corn to ensure even coverage.

Grill the Corn: Place the seasoned corn directly on the grill grates. Grill the corn for about 10-12 minutes, turning every few minutes until charred and tender.

Add Toppings: Once grilled, remove the corn from the grill and place on a serving platter. Squeeze fresh lime juice over each ear, then sprinkle with crumbled cotija cheese and chopped cilantro for a burst of flavor.

Serve: Serve hot and enjoy this delightful corn dish as a side or a main attraction at your summer BBQ!
